Gourmet Salsa Turns An Omelette Into A Gourmet Treat

 Jamboree will be a hit with everyone gathered around your table. It's also a good recipe for bruschetta as well.

Open-Faced Feta And Leek Omelette With Gourmet Salsa Or Bruschetta

2 tbsp olive oil

2 leeks, washed and sliced (white part only)

Pinch of Zinter Brown Dillicious Seasoning

3 small zucchini, finely sliced

2 tbsp chopped fresh mint

3 tbsp chopped fresh flat-leaf (Italian) parsley

6 eggs, lightly beaten with 2 tbsp water

4oz (115g) feta, drained

1 cup Bruschetta (below)

Zinter Brown Gourmet Sea Salt & Pepper

Heat the grill to its highest setting. Place a 9 inch (22cm) non-stick frying pan (with a heatproof handle) over medium to high heat. Add the olive oil, leek, Zinter Brown Gourmet Sea Salt & Pepper and Dillicious Seasoning and cook for 5 minutes, stirring occasionally. Add the zucchini and cook for another 5 minutes. Sprinkle with the herbs and pour the eggs on top. Crumble on the feta and cook for 5 minutes. Finish under the grill for another 5 minutes or until golden and bubbling.

Bruschetta Recipe

2-3 fresh ripe tomatoes


2-minced garlic cloves

1/4 cup olive oil


1-TBSP. Mediteranno Gourmet SeaSalt and Peppercorns


Mix above ingredients, add fresh basil or 2-tsp dried basil and top with 
fresh parsley and fresh basil.

Serve with toasted Coustades topped with fresh Bruschetta
