Gourmet Homemade Soup - A Delicious Pork Roast Recipe

Gourmet homemade soup is comfort food that's always a joy to share. This Zinter Brown favorite was submitted to us by Mary Anne Cameron and incorporates our Zinter Brown Roasted Garlic & Onion Jamboree in both the pork roast recipe and the gourmet homemade soup recipe. You know what they say you can never get too much of a good thing!

Pork Roast Soup

Bone from pork hock roast

12-14 cups water

2 packets (or cubes) of beef bovril

1/2 medium sized onion (chopped)

1 tbsp Mediteranno Gourmet Seasoning (or to taste)

1 1/2 cups chopped celery (use stalks and leaves)

1 cup frozen kernel corn

1 can (28oz.) diced seasoned tomatoes

1-5oz. can tomato paste

1 heaping tbsp of Zinter Brown Roasted Garlic & Onion Jamboree

1/4 cup barley

This gourmet homemade soup uses the remainder of a previously cooked pork roast (bone-in), which had been roasted with a glaze of Zinter Brown Roasted Garlic & Onion Jam. When initially carving the roast, try to leave 2 or 3 cups of meat on the bone, to use in this soup base.

Using a large Dutch oven pot, simmer bone, covered in water for a couple of hours (until meat falls off the bone). Strain liquid through colander/strainer, keeping the broth. Recover bits of meat; discard any excess fat and gristle.

Return the strained liquid to pot, and add the remaining ingredients, and season to taste. Return finely chopped strained meat bits to the pot. Simmer for 1-2 hours, until barley is tender. Optionally, you can garnish with fresh chopped parsley and shredded Parmesan cheese.
