Butternut Squash Soup Recipe - Classic Favorite With A Zinter Brown Twist

Butternut Squash Soup With Zinter Brown Pepper Pot Swirl
2 tbsp olive oil
2 1/2 cups chopped onion
4 garlic cloves, minced
1-2 butternut squash
5 cups chicken broth
1/4 1/2 tsp cayenne pepper
3 tsp fresh thyme or dried thyme
1 tsp grated orange peel
1 tbsp of any Zinter Brown Pepper Pot
Zinter Brown Gourmet Sea Salt & Pepper Seasoning to taste
Heat the olive oil in a frying pan. Add onions and saute until clear. Add minced garlic and saute for 5 minutes. Remove from heat.
Cut squash in half and remove seeds. Put 1 tbsp. of butter in each half, sprinkle with salt and pepper, cover and bake or microwave until soft. Scoop cooked squash from peel and combine squash, onion, garlic and seasoning with the chicken broth.
Bring to a simmer for 5 minutes, cool and puree all ingredients in a blender. Reheat, season to taste, swirl with your choice of Pepper Pots, and ladle soup into bowls.
For a different flavor sensation, Just before serving add 1 tbsp of any Zinter Pepper Pots. Garnish with fresh thyme.
